Being evil, immoral and/or insane don’t necessarily imply having Hypercognitive Dementia (a.k.a Walton’s Disorder a.k.a Mad Genius); the term “Mad Scientist”, however, implies a science person who does have it. I’m not saying she’s not, I’m just saying only the authors know for sure at this point.
I think she has a new, Sane version of Hypercognitive Dementia. So she can’t warp reality, but she can still do things thought impossible. And that’s more dangerous, since what she does can be Replicated.
That, or she’s the reincarnation of someone particularly brilliant and has combined mind powers or something…

Much as I love Ella Fitzgerald, I would have gone with Sinatra, specifically Come Fly With Me
I don’t quite understand why she’d be surprised he’s good at flying, since his aptitude was the reason she selected him in the first place.
I think it’s less that, more that she’s so happy to see her creation achieve its purpose and realize its own potential.
That and being up in the air is always more exciting than just hearing about it.
